4 boneless chicken breasts (no skin)
1&1/2 c. shredded mozzarella cheese
1 medium onion
1 green pepper
1 red pepper
1 8oz. package sliced mushrooms
1 tbsp. peanut oil
Garlic to taste

Directions:
Slice chicken breasts in half keeping one side still joined like a butterfly. Season chicken breasts with garlic.
Use medium heat to warm skillet and add peanut oil, (I like peanut oil the best but any oil will do). Fry chicken breast browning nicely on both sides. Once chicken is cooked, place into glass baking dish side by side leaving some space between.
Spread about half of the mozzarella cheese over the chicken.
Add mushrooms to the pan. Cook mushrooms separately then place some on each breast.
Slice the onions and break apart. Slice the green and red peppers. For appearance I try to keep these in one piece. (Circles)
Add onions, green and red peppers to the frying pan and cook until hot but still firm.
Place some onions on top of the mushrooms then arrange a green and red pepper on top.
Cover each chicken breast with the remaining cheese.
Bake for 15 minutes in a 350ºF oven.
