1 Package MF Scrambled Eggs
1/2 Tbsp Ground Flax
1 Tbsp Egg Substitute
1-2 Tbsp Water
1/4 - 1/2 tsp Baking Powder
1 Tbsp Chopped Veggies (Mushrooms, green pepper, broccoli, etc)
Pinch Pepper (to taste)
Other Spices (to taste)

Mix the packet of MF Scrambled Eggs in a microwave-safe bowl (1-2 cup size) with just enough water to help dissolve powder mixture. Let sit for 5-10 minutes while you gather the other ingredients.

Mix in Flax, pepper, baking powder (and optional spices) and Egg Substitute.

Stir in enough water to achieve the consistency of pancake batter. Mix in extra vegetables (optional).

Microwave until done. My microwave requires approximately 4 minutes. Cook one to establish your own timing. Remove from bowl and cool on a wire rack.

Once cool - package individually in freezer-safe bags. Can keep in refridgerator for 2-3 days. Can keep in Freezer for several months.

I make 8-10 at a time (assembly line) and then freeze separately. Drop one frozen Omelet in your lunch bag and it will thaw in a few hours.
