1 Tri Tip Steak
2 tbsp House Seasoning (see recipe in Marinade and Rub section)
2 tbsp olive oil
1 cup Red Wine
1 cup Beef Broth
3 Cloves Garlic
1 tbsp corn starch
1 tbsp cold water
1 Large Onion

Combine Olive Oil and House Seasoning in plastic food bag

Add Tri Tip and coat steak. Refrigerate and marinate for minimum of 1 hour.
Preheat oven to 350 degrees
Heat a Cast Iron or other oven proof pan on high heat. Place steak in dry hot pan and sear each side. Add coarsely chopped onion and garlic cloves after flipping steak. When second side is seared, add wine and broth.

Place oven proof thermometer into thickest part of steak. Place pan in oven and cook until steak reaches approximately 135 degrees. Remove steak, wrap in foil and let rest while reducing and thickening the pan juices by adding 1 tbsp corn starch mixed with 1 tbsp cold water.

Slice steak across grain and serve with gravy.
