1 16-oz. can garbanzo beans, drained
1 garlic clove, minced
3 T. olive oil
3 T. fresh lemon juice
1/4 c. sun dried tomatoes (canned)
3 T. fresh parsley, chopped
Salt and pepper

Directions:
Directions:
Drain beans, save liquid. Combine with garlic, olive oil and lemon juice in a food processor. Blend until beans are smooth. Add sun dried tomatoes and parsley, blend until tomatoes and parsley are incorporated into the mixture. Add liquid from beans a little at a time to obtain a smooth consistency. Add salt and pepper to taste. Serve with pita triangles.
