1 pkg. Mild Sausage
1 Large Vildalia Onion Chopped
1 1/2 tsp. Cumin
1 Tbs. parsley
Dash of Cayenne, salt & pepper
1 Cup of Mayo
3 oz. of Swiss or Parmesan Cheese grated
1 Cup Sharp Cheddar Cheese grated

Directions:
Directions:
Over medium heat, cook sausage, cool, crumble and set aside. In same pan saute onions with cumin, parsley, cayenne, salt & pepper. Mix cooked sausage, onion mixture, mayo and cheese. Pour into lightly greased dish and sprinkle with additional cheese if desired. Bake at 350º for about 45 minutes, or until brown and bubbling.
