For Bacon Ranch Dressing:
1/2 c. real bacon pieces
1/4 c. milk
1/4 c. sour cream
1/4 c. mayonnaise
1 1/2 tsp. ranch salad dressing mix (Hidden Valley)
For Potato Salad:
2 1/2 lbs. red potatoes, cut into 1/4" thick slices
Nonstick vegetable cooking spray
1 sweet onion, chopped
1 jar (4 oz.) pimientos, drained
1/3 c. sliced olives, drained
2 stalks celery, chopped
2 Tbsp. finely chopped fresh parsley
Salt

To make bacon ranch dressing combine bacon pieces, milk, sour cream, mayonnaise, and salad dressing mix in a medium bowl. Cover and chill until ready to use. For potato salad, preheat oven to 400ºF. Lay potatoes on a baking sheet and spray with nonstick vegetable cooking spray. Roast in oven about 30 minutes or until fork tender, turning once. Cool. Cut cooled potatoes into bite-size pieces. In a large bowl, combine potatoes, pimientos, onion, olives, celery, and parsley.
Using a rubber spatula, fold in Bacon Ranch Dressing until combined. Season to taste with salt and pepper. Chill 1 to 2 hours before serving.
