12 medium potatoes, peeled and cubed
2 c. (8 oz) shredded cheddar or swiss cheese, divided
1-1/4 c. milk
1/3 c. butter or margarine, softened
1 to 2 tsp. salt
2 eggs, beaten

Directions:
Directions:
Place the potatoes in a saucepan and cover with water; cover and bring to a boil. Cook until tender, about 15-20 min. Drain and mash. Add 1-3/4 c. cheese, milk, butter, and salt; cook and stir over low heat until cheese and butter are melted. Fold in eggs. Spread into a greased 13 in. x 9 in x 2 in pan. Bake uncovered at 350º for 25-30 min. Sprinkle with the remaining cheese. Bake 5 min. longer or until golden brown.
