6 slices of bacon
1 cup rice
1 cup thinly sliced onions
2 1/2 cups canned tomatoes ( I use tomatoes and green chili's)
1 teaspoon salt
2 teaspoons paprika
1 or 2 seeded and minced green pepper
(2 pressed cloves garlic)

Directions:
Directions:
Saute bacon until crisp. Remove bacon. Stir and cook in the dripping until browned, rice. Add and cook until golden the onion. Add the Bacon and canned tomatoes, salt, paprika, green peppers and garlic, if desired. Steam rice in a double bailer about 1 hour. Stir frequently. Add water or stock if the rice becomes too dry. It may be served with cheese sauce.

Cheese sauce is in this cook book under sauces. None of my children have requested a cheese sauce. I think they just couldn't wait for the sauce to be ready to eat. Hope you like it!!!
