2 whole chicken breasts, each weighing about 2 lbs, split
1 medium onion, coarsely chopped
2 ribs celery, coarsely chopped
2 Tbs. chopped parsley
1 large bay leaf
2 tsps. salt
1/2 tsp. dried thyme
1/4 tsp. peppercorns
white bread, toasted
mayonnaise
salt and pepper, to taste
lettuce leaves

Directions:
Directions:
Place rinsed chicken breasts in a pot just large enough to hold them without crowding. Add onion, celery, parsley, bay leaf, salt, thyme and peppercorns, and enough water to cover. Cover tightly and bring to a simmer. Simmer gently for 12 minutes. Without uncovering, remove pot from heat. Allow to cool undisturbed, during which time the chicken will finish cooking to a succulent goodness. Remove chicken from broth and drain well. Wrap each breast half tightly in foil or plastic wrap and chill.

To make a sandwich, discard skin and thinly cut meat from breast halves into large slices, allowing half a breast for each sandwich. Toast the bread and spread with mayo, add chicken and season with salt and pepper. Cover with lettuce and serve.
