1 lb bittersweet chocolate, broken into small pieces
1 stick unsalted butter
9 large eggs
3/4 c sugar, plus 1 Tbls
1 c heavy cream
confectioner's sugar for dusting

Directions:
Directions:
Preheat oven to 350 degrees.
Put chocolate and butter in double boiler over about 1 inch of simmering water until melted. Meanwhile whisk the egg yolks with the sugar in a mixing bowl until light yellow in color. Whisk a little of the chocolate in to the egg yolk to temper the eggs, then whisk the rest of the chocolate mixture.
Beat the egg whites in a mixing bowl until stiff peaks form and fold into the chocolate mixture. Pour into prepared pan, spray with nonstick spray. Bake 20 to 25 minutes or until set. Let stand 10 minutes then unmold. Dust with powdered sugar.
