3 TBL Butter
2 TBL minced shallots
1 TBL all purpose flour
12 oz thin sliced mushrooms
1 cup heavy cream
¼ cup Madeira Wine
½ tsp dried thyme
Salt and ground pepper to taste
2 tsp snipped fresh chives

Directions:
Directions:
Melt butter in med. Skillet. Cook shallots in butter on low heat for 5 minutes. Sprinkle the flour over the shallots and stir. Stir in the cream, Madeira then the mushrooms and thyme. Simmer over low heat stirring often until sauce thickens slightly about 20 minutes, season with salt and pepper, garnish with chives.
