Ingredients: oil for frying garlic 500 gr jar of tomato paste water 1 tablespoon of sugar 1kg of chicken wings or legs (there about) handful of fresh Basil handful of fresh Rosemary (or dried mixed herbs) enough spaghetti pasta to feed the family Romano or Parmesan cheese to serve

Directions:In a large saucepan heat oil and fry garlic. Empty the whole jar of tomato paste in saucepan and stir continuously for a couple of minutes. Add water (fill the empty tomato paste jar with water that will give you the quantity of water) and sugar and stir. Add chicken pieces, herbs and stir. Bring to boil and simmer for about an hour (until chicken is cooked) remove chicken pieces (and keep warm until ready to serve). Depending on how you like the consistence of the sauce you can add more tomato paste to thicken or water to thin out, but simmer the sauce for a little longer after taking the chicken out.
In the mean time bring water to the boil, add salt and spaghetti and cook to your liking. Drain the spaghetti and add the tomato sauce from the saucepan that you cooked the chicken pieces in and mix the spaghetti and sauce together and serve with Romano or Parmesan cheese and chicken pieces.
Nice with side salad and fresh crusty bread. |

Notes: With any leftover sauce (and there usually is) you can freeze and use on other dishes such as Spaghetti Bolognese, Spaghetti and Meatballs or just as a sauce with any pasta for a quick meal.
This recipe was given to me by my mother-in-law and has become one of our family favorites.
You can substitute the chicken wings or legs for pig trotters or chicken feet (Peter and his family love this however we prefer the chicken wings).
