1 ( 3-lb.0) stewing hen or chicken or chicken breasts
2 quarts water
2 tsp. salt
3/4 tsp. pepper
1 onion
1/4 cup chopped celery leaves
2 cups self-rising flour
3 Tbl. shortening
3/4 cup milk
2 cans chicken broth (optional)

Directions:
Directions:
In Dutch oven, put chicken, water, and salt. Cover and boil. Reduce heat, and pepper, onion, and celery leaves. Simmer until chicken is tender. remove chicken, onion, and celery leaves. Cool chicken: skin, debone, and cut into pieces. Set aside. Boil broth( this is where I add 2 cans of chicken broth, MK). Combine dry ingredients. Cut in shortening and add milk until ingredients are moistened. Turn onto flour board. Knead lightly. Roll to 1/2" thickness. Cut into 1 1/2 pieces. Drop into boiling broth. Turn heat low and cook 10 minutes. Stir gently. Stir in chicken and heat.
