1 tbsp. oil
2 medium onions, chopped
1 1/2 tsp. oregano
1 1/2 tsp. cumin
1 1/2 lbs. lean ground turkey
1/4 cup chili powder
2 bay leaves
1 tbsp. unsweetened cocoa powder
1/2 tsp. salt
1/4 tsp. ground cinnamon
1 28-oz can whole tomatoes
2 cups beef stock
1 8-oz can tomato sauce
3 15-0z cans white beans, drained and rinsed (or 5-6 cups cooked beans)

chopped red onion
chopped cilantro
sour cream or yogurt

Heat oil in large heavy pot over medium heat. Add onions and sauté until light brown and tender, about 10 minutes. Add oregano and cumin; stir 1 minute. Increase heat to medium high. Add turkey, stir and break up until no longer pink. Stir in chili powder, bay leaves, cocoa, salt, and cinnamon. Add tomatoes and their juices, breaking up with a spoon. Mix in stock and tomato sauce. Bring to boil, reduce heat, and simmer for 45 minutes, stirring occasionally.

Add beans to chili and simmer until flavors blend, about 10 minutes.
