4 T. Butter
4 T. Extra Virgin Olive Oil
3 md. Onions, thinly sliced
2 sm. Green Peppers, seeded and diced
2 md. Eggplants, peeled and diced
5 Tomatoes peeled and diced
4 md. Zucchini, cut in half then sliced
Salt and Pepper to taste
2 md. Garlic Cloves, finely chopped
˝ tsp. Italian Seasonings
2 T. Chopped Parsley

Sauté the onion in the oil and some butter in a stew pot until golden brown. Add the peppers and eggplant. Turn heat down. Cook for about seven minutes, stirring often. Add the tomatoes and zucchini. Cover tightly and simmer for a 30 minutes. Add the salt, pepper, and seasonings and garlic. Cook uncovered for 10 minutes. Stir in the parsley and cook for 5 more minutes.

This is a really good vegetable stew. I make it a lot every gardening season. It's so good! I serve some crusty bread with it and we use it as a main dish. You can get all your daily vegetable servings in one pot!
