6 c. White Navy Beans, cleaned and soaked overnight in cold water
1 lg. Ham Hock
1 T. Tabasco Sauce
2 md. Onions, quartered
Salt and Pepper to taste
6 Garlic Cloves, chopped

Directions:
Directions:
Drain the beans and place in a large pot with enough water to cover them. Bring to a boil then remove from heat and let sit for 2 hours. Drain and cover with warm water and remaining ingredients. Cover and cook until the beans are done but not mushy. Take out the hock and debone, chop, and return it to the pot and serve.

These beans are even better the next day. (The windy part usually happens the next day too.)
