9” deep dish Pet-Ritz pie shell
5 large tomatoes – peel, core and slice (thick)
¾ tsp. Fresh basil
3 Tbsp Scallions – chopped
¾ cups Mayo (Hellmann’s light is OK)
1 ¼ cup grated cheddar cheese
Salt and Pepper

Directions:
Directions:
Preheat oven to 325º
Bake pie shell at 350º for 5 minutes
Fill piecrust with sliced tomatoes, sprinkling salt, pepper, basil, and scallions over each layer.

Mix mayo and cheese and spread over tomatoes.

Bake at 400 for 35 minutes.
Let settle for 5 minutes before cutting.
