3-4 lbs. Shoulder, chuck, rump or round roast.
Put in large pot or roaster.
Salt and pepper.

Brown beef in small amount of olive oil until it is no longer red. Slice large onion over meat.

2 ways to cook-
1. Bake at 300 for 30 minutes per pound in covered casserole or wrapped in foil.
2. Cover with water and cook on top of stove – medium heat for 2-3 hours. Add carrots, potatoes and whole onions – last 20 minutes.
