1 chicken (cut-up) or chicken breasts and legs as desired
¼ cup Wesson or vegetable oil
1 medium onion (chopped)
1 clove garlic, minced
1 tsp. salt
¼ tsp. pepper
1 tbsp. oregano
2 fresh tomatoes (diced)
1 can (4 oz.) chopped mushrooms

Directions:
Directions:
Coat pieces of chicken with vegetable oil to hold in the juicy goodness during the cooking. Brown in heavy skillet over medium heat. Add onion and garlic. Cook several minutes.

Sprinkle with salt, pepper and oregano. Add tomatoes and mushrooms with juice. Cover and cook over low heat for 30 minutes until tender.

A parsley garnish is pretty with this dish.
