Size depends on how many you are serving – ask the butcher for help.
Make sure it has been trimmed of most of the fat – you do want a little for flavor.

Shake generous amounts of garlic powder, lemon pepper, Worchester sauce, and add-
Minced onion, any seasoning mix, red wine.
Marinate 2 hours at room temperature.

Oven-
Preheat to 450, cook 10 minutes.
Reduce heat to 350 and cook 20 minutes per pound – uncovered.

Grill-
It will need to cook for about an hour.
Use a meat thermometer or check it – don’t leave totally unattended.
