Ingredients: Chicken legs, thighs, breast, wings (all with skin) Canola Oil Flour Salt Pepper Potato water Milk

Directions:Rinse chicken parts in water and spread out on paper towel. Coat each piece well in flour and set aside. In large frying pan or electric frying pan, add 1/2 inch of oil and heat on medium high. When hot, place floured chicken pieces in pan about 1/4 inch apart. Salt and pepper each piece well. Oil needs to be boiling slightly while chicken is in the pan but not too hot to where it's smoking. Turn heat down if needed. Cover with lid slightly open to allow some steam to escape. Cook about 20 minutes on that side. Turn each piece over and add salt/pepper to the other side. Cook another 20 minutes or until golden brown. Line a 9x13 pan with double thick paper towels. Line cooked pieces in the pan and cover with paper towel until ready to serve. Once all chicken is cooked and removed, turn pan off and drain oil until the only thing left are the crumbs at the bottom and about 1/4 cup of grease/oil. Add 1/2 cup of flour to crumbs and oil and mix well. Add 2 cups of potato water and 1 cup of milk, stir and turn heat back on to medium heat. Stir often until it boils. If it's too thick, add more potato water or water to mixture. Salt and pepper to taste. |
