2 md. Zucchini, cut up
3 T. Butter
1 T. Onion, chopped
1 pkg. Chicken Gravy Mix
½ c. Water
2 c. Milk
1 T. Parsley, chopped
2 T. Coffee Mate
½ tsp. Salt
Half & Half
Directions:
Directions:
Cook the first five ingredients on low heat until tender then mash. Cook the butter, gravy mix, and milk until thick. Add the coffee mate and stir well. Add the sauce to the zucchini mixture and mix until well blended. Add the half and half until the soup reaches the desired consistency. Serve hot or cover and chill for a cold soup.
