a couple of handfulls of grated cheese (maybe 3/4 c.?)

Stir together. Microwave for about 2 minutes. Stir again. Eat with chips, salsa, and guacamole.

Our favorite Mexican restaurant in Provo served a delicious bean dip to help offset their burning hot salsa appetizer. This is the closest we can come to the original. I'm sure if you made the refried beans from scratch it would be even better.
