Ingredients:  
3 12oz cans Chicken Stock- (I use bullion if I don’t have stock.)
1 can Stewed Tomatoes,
1 can Diced Tomatoes with Green Chilies,
3 Carrots, sliced into coins,
3 Celery Stalks, chopped,
1 can Black Beans, drained and rinsed,
1 bunch Cliantro, chopped,
3 Chicken Breasts, cooked and shredded (or use rotisserie chicken)

Directions:
Directions:
Mix all of the ingredients in a large pot. Bring to a boil and then simmer for at least 30 minutes. This can also be done in a crock pot and cooked all afternoon. If you would rather a thicker soup, you can dice up a flour tortilla and stir it into the soup. Serve when the tortilla is dissolved.
