1 c. Onion, chopped
1 qt. Chicken Broth or Stock
2 Leeks, chopped (white part only)
1 c. Light Cream
¼ c. Butter, melted
Salt & White Pepper to taste
2 c. Potatoes, diced
2 T. Chives

Directions:
Directions:
Sauté the onion & leeks in butter for about 20 minutes. Add the potatoes, chicken broth, salt, & white pepper. Blend until smooth. Chill until cold then add the cream. Garnish with the chives (or you can use the tops of green onions).

This is one of my favorite summer soups. I serve it with a fruit salad and some sugar cookies.
