1 c. Chicken, cooked & shredded
1 pkg. Frozen Mixed Vegetables
6 c. Chicken Broth
2 cans Cream of Chicken Soup
2 c. Potatoes, cubed
1 lb. Velveeta Cheese, diced
1 Onion, diced
Shredded Cheddar Cheese (opt.)
Directions:
Directions:
Put all of the ingredients except for the frozen vegetables & soup in a large pot and bring to a boil. Cook until the potatoes & onions are almost tender. Add the frozen vegetables & soup. Simmer until the vegetables are tender. Add the Velveeta cheese and a sprinkle of cheddar cheese. Simmer until the cheese is melted, stirring often.
