Smoked kielbasa, from Chicopee Provision

Slice pre-cooked basi very thinly and fry. Remove cooked kielbasa, clean up the pan, add some butter and melt it. Then add whisked eggs (2-3 per person), add back the kielbasa, cook slowly and season with salt and pepper.

This is the best "morning after" recipe. Use kielbasa that has been cooked, typically left over from an Easter or Christmas meal. Great after Bloody Marys or mimosas. CMB
