1/2 c. chopped onions
2 cloves garlic
1 T. olive oil
1/2 tsp chili powder
1/2 tsp cumin
1 (14 oz.) can chicken or vegetable broth
1 cup corn
1 can rotel
2 T. fresh chopped cilantro
3/4 cup couscous

Directions:
Directions:
Saute onion and garlic in olive oil over medium heat until tender.
Stir in cumin and chili powder and cook for 1 additional minute
Add broth, corn, rotel and cilantro and bring to a boil.
Stir in couscous, cover and remove from heat.
Let stand for 5 minutes.
Fluff with fork before serving
