1 1/2 c. uncooked white rice
2 2/3 c. water
1 1/2 c. black beans, rinsed
1 large tomato, seeded & diced
1 1/2 c. shredded cheddar cheese
2/3 c. scallions
1 c. chopped green & red pepper
2/3 c. olive oil
1/2 c. vinegar
1 tbs. diced jalapeño
1 tsp. sugar
salt & pepper


Combine oil, vinegar, jalapeño, salt & pepper. Blend well. Make ahead to blend flavors.
Cook rice, cool and mix in remaining ingredients. Add dressing. Cover & refrig. 30 min. Makes 12 servings
