1 3/4 c. sifted flour
1 1/2 c. sugar
1 1/4 tsp. double-action baking powder
1/2 tsp. soda
1 tsp. salt
1/2 c. high grade vegetable shortening
1 c. milk
1 tsp. vanilla
1/2 to 2/3 c. unbeaten egg (2 large eggs)
2 squares (2 oz.) unsweetened chocolate, melted
1/2 tsp. red food coloring

Directions:
Directions:
Sift together in a bowl the flour, sugar, baking powder, soda and salt. Add vegetable oil, milk and vanilla. Beat vigorously with spoon for 2 minutes (about 150 short strokes per minute). Or, mix with electric mixer on slow to medium speed for 2 minutes. Scrape sides and bottom of bowl frequently. Add 1/2 to 2/3 cup unbeaten egg, 2 squares unsweetened chocolate, melted, and 1/2 tsp. red food coloring. Beat for 2 more minutes, scraping bowl frequently. Pour into prepared pans. Bake 30 to 35 minutes at 375º. When cool, frost with chocolate icing.
