Sift together:
2 cups flour
1 tsp baking powder
1 tsp salt
1 tsp soda
Mix together:
1 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla

Mix all these together and add 1 cup oatmeal and 2 cups coconut.

Drop on greased pan and bake at 375 degrees for 9 to 12 minutes.

To make this wheat-free, substitute two cups of GFM pancake mix for the flour. Gluten free oats do not work well in this recipe.
