1 T. Olive Oil
1 small Onion, diced
1 or 2 cloves Garlic, finely chopped
1 can Black Beans, drained and washed
1 can Tomatoes, drained
Cooked Rice (optional)

Directions:
Directions:
Cook rice. Sautee garlic and onion together with olive oil until slightly caramelized over medium heat. Stir in black beans and tomatoes and simmer on low until the flavors are well blended. It is good just like this but if you want the dirty rice stir in 2 cups cooked rice.

I kind of came up with this from memory. This is a great dish and I wish it was in my cookbook and I am sure I am missing something. It comes from the old Betty Crocker Cookbook. Can’t find it in the new and mom has the old one!
