3 t flour
1 package fajita seasoning, divided
4 skinned and boned chicken breast halves, cubed
3 T vegetable oil
1 med onion, chopped
1 tsp minced garlic
1 can whole kernal corn w/ red and green peppers, drained
1 can mexican style stewed tomatoes
1 can chopped green chilies
3 cups water
1 cup uncooked instant brown rice
1 can sliced ripe olives
1 can nacho cheese soup
3 T chopped fresh cilantro
1 T lime juice

Directions:
Combine flour and 2 T seasoning mix in a heavy duty zip lock bag. add chicken. Seal and shake to coat. Cook chicken in hot oil in a large dutch oven over high heat, stiring often, 4 minutes or until browned. Reduce heat to med high and add onion and garlic. saute 5 min. Stir in remaining fajita seasoning, corn, next five ingredients and olives. Bring mixture to a boil. reduce heat to med low cover and simmer 5 minutes. Remove lid and stir in nacho cheese soup, chopped cilantro and lime juice. Garnish w/fresh cilantro, if desired and serve with fresh bread or bread sticks.
