2-3 green onions
1-1/2 clove garlic
1 medium onion
2-3 thyme leaves
Lowery salt

Medium pot roast

Directions:
Directions:
Finely chop green onions, garlic, and onion. Put in covered container along with thyme, lowery salt, salt, and pepper. refrigerate over night.

Stab in top, bottom and all sides of roast. Poke finger in holes and stuff in seasoning.

Cover and refrigerate for 24 hours.

Put roast in covered roaster with 1-1/2 tbsp of hot grease and seer on all sides. Cook on stove top on low heat for 4 hours or until tender, turning every half hour. You can also cook in oven at 350 degrees for 4 hours after seering if you wish. add enough water into bottom of pan to prevent burning if cooked in oven.
