Ingredients: Filling 2 ½ cup raisins ½ cup sugar 2 tablespoons cornstarch ¾ cup water 3 tablespoons
Crumb Mixture ¾ cup butter 1 cup brown sugar 1¾ cup flour ½ teaspoon salt ½ teaspoon soda 1½ cup oatmeal

Directions:Stir ingredients for filling over low heat until thickened. Cool. Make crumb mixture. Mix sugar and butter, add dry ingredients, then add oats. Press half mixture into greased 9X 13 pan, spread on filling. Pat on the remaining crumbs. Bake 400 degrees for 20 to 30 minutes. |

Notes: This was how mom (Rosie Henderson) got us to eat raisins. We all loved these cookies as kids and they were “good” for us. I made this recipe until I found the recipe for Triple good bars, which has gobs more calories. Now I make the crumb mixture and use it with apricot jam/ peach jam/ or homemade apricot or peach butter for the filling. I love the apricot filling. The crumb mixture can be use for a quick cobbler. One can of cherry pie filling in an 8x8 pan, sprinkle cinnamon on cherries and use enough crumb mixture to cover the top. Bake. Crumb mixture may be stored in a air tight container in the refrigerator or froze.
