1/2 T salt
1/3 c oil
1/3 c honey
2 chewable vitamin C tablets
1 T soy lecithin granules
3 T molasses (optional)
1 egg (optional)
3 T dry milk (optional)
3 c hot water @ 120 degrees (I get this from the tap)
8-10 c freshly ground winter white flour
2 T yeast

Mix all ingredients together except flour and yeast.

Add 3 cups of flour, mix.

Sprinkle 2 tablespoons yeast over surface of mixture and mix again.

Add flour 1 cup at a time until sides and bottom of bowl come clean (about 8 cups total)

Knead for 5-7 minutes and cover bowl.

Let rise for 30 minutes. Shape into 4 loaves- pat out 1/4 of the dough into a rectangle and then roll into a loaf shape. Pinch ends and tuck under and place in loaf pans, seam side down.

Let rise 30 more minutes.

Bake at 325º for 25 minutes.

If you are in a hurry, you can skip the first rising time. Just shape into loaves after kneading and let rise in pan. I will often double the recipe and bake 4 loaves at a time, allowing just one rise time for the first batch.

I always add the optional ingredients of dry milk and egg, but not usually the molasses.
