2 1/2 c all purpose flour
1 1/4 cups white granulated sugar
2 (3.4-oz.) package instant vanilla pudding mix
1 1/4 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
5 large eggs
2 c mashed bananas (4 to 5 medium)
1 c vegetable oil
1 tsp vanilla extract
1 c chopped nuts (walnuts or pecans)

In a large bowl, combine flour, sugar, instant vanilla pudding mix, baking soda, salt, and cinnamon.

In a mixing bowl, beat the eggs, bananas, oil, and vanilla; stir into the dry ingredients, just until moistened. Stir in nuts.

Transfer to two greased 8x4x2-inch loaf pans. Bake at 350º for 55 to 65 minutes, or until a toothpick inserted near the center comes out clean.

Cool for 10 minutes before removing from pans to wire racks to cool.
