16-18 lb Turkey
3 cups Jack Daniels
1/4 cup herbs de Provence
3 Tbsp olive oil
salt and pepper to taste
2 yards cheesecloth

Directions:
Directions:
Thaw turkey and remove neck/giblets from cavity. Soak one yeard of cheesecloth in Jack Daniels and stuff into cavity.
Rub herbs de provence under the skin of turkey
Wrap the turkey with remaining cheesecloth and soak the cloth with remaining Jack Daniels. Marinate in ther refrigerator for 24 hours, turning the turkey over 4-5 times.

Next Day:

Preheat oven to 275º
Remove cheesecloth from outside of turkey and stuff it into cavity with other cheesecloth
Rub turkey with olive oil, salt nad pepper
Bake at 275º for 5 hours, basting frequently
