2 1/2 c. plain flour
1 1/2 c. sugar
1 1/2 c. vegetable oil
2 eggs
1 c. buttermilk
1 tsp. white vinegar
1 oz. red food coloring
1 tsp. vanilla
1 T. cocoa
1 tsp. soda
Pinch of salt

Directions:
Preheat oven to 350º. Mix soda and vinegar; set aside. Cream sugar, eggs and oil together. Sift flour, cocoa and salt. Add sifted ingredients alternately with buttermilk, vanilla, and red food coloring to creamed mixture. Mix well. Fold in soda-vinegar mixture. Bake in 3 greased and floured pans for 30 to 35 minutes. Cool layers well. Frost with cream cheese frosting.
CREAM CHEESE FROSTING:
1 (8 oz.) pkg. cream cheese
1 stick butter
1 box 10X confectioners sugar
1 c. chopped nuts
Cream butter and cream cheese (softened to room temperature) until smooth. Add sugar. When mixed, add nuts. Spread on well cooled layers.
