2 sticks unsalted butter
1 1/2 cups finely chopped almonds
2 and 1/4 cups light brown sugar
2 and 1/4 cups rolled oats
3 tablespoon all purpose flour
1 tsp of orange peel (i used a clementine)
1 tsp salt
1 large egg slightly beaten
1 tsp vanilla

Preheat oven to 375º. Line large cookie sheet with parchment paper. don't skip this step. Heat buttered sugar in medium sauce pan. Remove from heat. Stir in the rest of the ingredients. Drop a tablespoon of dough on pan about three inches apart. These cookies really spread out. Experiment with how much dough makes how big a cookie. Bake for about 6 minutes. let cool in pan about a minute and then place on cooling tray. I haven't tried it but think these are cookies that you can manipulate while warm to form a tube. Some people drizzle with chocolate but I like them "as is".

My girlfriend Ellen Young Woltz's mother, Fran Young, made similar cookies when we were kids. On reflection it probably wasn't reasonable for me to visit and eat 10 or 12 of these cookies. I might have been especially hungry after bringing John F. Kennedy back during a seance in Ellen's closet when we were about 10 years old.

Made these for my mom often while she was isolated because of the 2020 Covid-19 pandemic. She adored them!
