Chicken Pot Pie Recipe

leftover chicken or turkey from the day before (cut into 1" chunks)

1 medium onion, diced
4 medium carrots, diced
3 medium celery ribs, diced
3 potatoes, diced
salt and pepper to taste


4 tbsp butter
1/2 c flour
4 c chicken broth
1 tbsp. lemon juice
1/2 c cream
1 tsp dried parsley
1/4 tsp dried thyme leaves
Salt and pepper to taste

Biscuit dough - see recipe in book

Saute onions, carrots and celery in 2 tbsp oil until onions are translucent.

Add flour and butter; stir till incorporated well - 1 minute.

Add broth, juice, parsley, thyme, salt and pepper and potatoes.

Simmer until veggies are tender.

Add chicken; put in 2 qt casserole.

Top with biscuits - you can make drop biscuits by adding extra milk to the recipe

Bake 400 25-35 minutes, until biscuits are done and filling is hot.
