1 (18 1/4 oz.) pkg. yellow cake mix
1 (3/4 oz.) pkg. instant vanilla pudding mix
2 tsp. ground cinnamon
4 eggs
2/3 c. orange juice
1/2 c. vegetable oil
3 c. grated carrots
1/2 c. raisins
1/2 c. chopped walnuts
8 oz. pkg. cream cheese
1/2 c. butter, softened
3 c. confectioners sugar
2 T. orange juice
1 T. grated orange peel

In large bowl, combine cake mix, pudding, and cinnamon. Whisk the eggs, orange juice, and oil and add to dry ingredients. Beat well. Stir in carrots, raisins, and nuts. Mixture will be thick. Pour into greased and floured pans. Bake at 350 for 30 to 35 minutes. Cool 10 minutes. Remove from pan. Cool completely.
Mix cream cheese and butter until fluffy. Add sugar, orange juice and orange peel; beat until blended. spread between layers and on top and sides.
