Oil to coat bottom of pot
3 - medium onions, finely chopped
2 - medium green bell peppers
3 - stalks celery, finely chopped
8 lbs. ground beef
1-1/2 lbs. ground pork
1 - 6oz. can tomato paste
2 - large cans stewing tomato's
2 - large cans tomato sauce
3 - garlic cloves chopped
2 - 3oz. jars chili powder
4 tabs. salt
2 to 4 tabs. Oregano, to your taste
1 - 7oz. can chili salsa
1 - jalapeņo chopped
2 tbsp. garlic salt

Directions:
Directions:
Ground beef and pork in pot. Remove excess grease and set aside
Saute Onions, bell peppers, celery and garlic for 10 min.
Add the ground meat and cook an additional 10 min. or until brown.
Stir in tomato products
Add Chili Powder, sale, oregano, chili salsa, jalapeņo and cook for 30 minutes.
Season to taste with garlic salt
simmer for 2-1/2 hours, stirring every 15 minutes to keep from burning on bottom.

This is my dad's famous chili. He would make a pot of this at least once a month during the winter. He did not cook very much until he retired and then the kitchen became his domain. He has many stew and chowder dishes that we still make today. This was our favorite.
