2 limes (for juice)
1 tsp. extra-virgin olive oil
1/2 tsp. kosher or flavored salt
1/4 tsp. black pepper
1 15.5 oz. can black-eyed peas, drained
1/3 C. onions
1/3 C. diced bell pepper
1 medium tomato
10-12 sprigs cilantro (optional...can substitute parsley)
Diced jalapeņos or habeneros to taste, optional

Directions:
Directions:
Combine juice of both limes, olive oil, salt, and pepper in medium bowl until blended. Stir in peas, onions, and bell pepper.

Cut tomato in half, remove ends. Chop coarsely into 1/4 inch pieces; chop cilantro or parsley coarsely, stir both into pea mixture.

Chill 15 minutes or more to blend flavors.

Serve with pita chips or crackers.
