Red Beans and Rice Recipe

1 large bag of red beans
Soak overnight. Drain & rinse.
Take 4-5 pieces of bacon & fry. Remove bacon. In bacon grease add 1 pkg. of ham hocks, 1 large hot link sausage and saute for around 10 minutes. Add 1 onion. Saute for another 5 minutes.
Add to beans:
1-2 garlic cloves or 1/4- 12 tsp. garlic powder,
1 tsp. salt,
1/2 tsp. black pepper,
1/4 tsp. chopped red pepper.
Add 6 cups water. Bring to boil then simmer for 6 hours stirring occasionally. Add water if necessary.

Make rice and serve with the beans. Serve with cornbread and salad.

Hop & John

Same as above except use blackeyed peas. Cook 1 cup uncooked rice and add it to the beans and then cook another 20 minutes or until .
Serve blackeye peas on January 1 for good luck all year.
