1 whole beef eye fillet
plain flour
1/4 cup olive oil
1/3 cup capers
2 tablespoons Balsamic vinegar
2 teaspoons caster sugar
80g butter, chopped
2 tablespoons chopped fresh parsley

Directions:
Directions:
Remove any excess fat from beef, cut into slices. Flatten each slice with meat mallet. Toss beef in seasoned flour, toss off any excess.
Heat oil in pan, cook beef in batches until lightly browned on both sides, remove from pan & keep warm.
Pour excess oil from pan, add capers, vinegar and sugar to pan, cook, stirring, until liquid is reduced by half.
Remove pan from heat, stir in butter and parsley. Spoon sauce over beef.
