1/2 pound finely ground beef
1/2 pound finely ground pork
1/2 pound finely ground veal
1 tablespoon unsalted butter
1 cup finely chopped onion
1/2 teaspoon finely minced garlic
1 cup bread crumbs
1 egg, lightly beaten
1/2 cup finely chopped parsley
1/4 cup milk
Kosher salt and freshly ground pepper to taste
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
8 tablespoons freshly grated Parmesan cheese

1. Preheat the oven to 425º.
2. Put the meats in a mixing bowl.
3. Melt the butter in a saucepan and add the onion and garlic. Cook stirring until they are wilted. Let cool briefly then add to the meats.
4. Add the bread crumbs, egg, parsley, milk, salt, pepper, nutmeg and allspice. Blend until just mixed.
5. Divide the mixture into four equal portions. Pack each into a one-and one-half cup ramekin or individual souffle dish.
6. Sprinkle the top of each meat loaf with two teaspoons of the grated cheese.
6. Place in the oven and bake for 30 minutes.
7. Let the loaves cool for about five minutes before unmolding.

This is a great quick meatloaf recipe. The loaves are also excellent cold and can be served sliced in sandwiches.
