1/2 (8 oz.) pkg. Neufchatel cheese
1 tsp. dry Ranch salad dressing mix
2 tsp. lemon juice
6 oz. frozen crabmeat, thawed and drained well
3-4 medium zucchini squash
Paprika of fresh parsley

Microwave (high) cheese in uncovered glass bowl 1/2 to 1 mix minute until softened. Stir in salad dressing and lemon juice until smooth. Mix in crabmeat with fork. Cut zucchini into 1/4 inch. thick slices. Arrange about 20 slices on a glass serving plate. Spoon a scant tsp. of crab mixture onto each slice. Sprinkle with paprika or garnish with parsley sprigs. Microwave uncovered 1/2 to 2 minutes or until hot. Repeat with remaining zucchini and topping. Serve warm or cold. Note: A 6 oz. can of crabmeat or water-packed tuna can be substituted for frozen crab. To thaw crabmeat, use low or 1/3 power for 2 minutes.
