2 -8oz cream cheese (room temperature)
1 pound cottage cheese (small curds)
1-1/2 cups sugar
4 eggs, slightly beaten
3 tbsp cornstarch
3 tbsp flour
1-1/2 tbsp lemon juice
1 tsp vanilla
1/2 cup melted butter
1 pint sour cream
Crust: 1-1/4 cup flour, 1 egg, 1/4 cup sugar, 1 tsp heaping baking powder, 1/4 cup butter, 1/2 tsp vanilla, water
Topping: of your choice

Preheat oven to 325ºF. Grease springform pan. For crust, blend butter, sugar, flour, baking powder. Add eggs, vanilla and enough water to hold together. Press into pan.

In a large bowl on high speed, blend cream cheese and cottage cheese until creamy. Add sugar and eggs and continue to blend on high speed. Reduce to low speed and add cornstarch, flour, lemon juice and vanilla. Pour into prepared crust. Bake on 325ºF for 1 hour and 10 minutes. Turn off oven and leave cheesecake in oven for an additional two hours. Add topping if desired.
