4 c. sliced zucchini (large)
1-1/4 c. sugar
2 Tbsp. flour
1-1/2 tsp cinnamon
2 Tbsp. lemon juice
1-1/2 tsp. cream of tartar
dash salt & nutmeg
pastry for 2-crust pie

Directions:
Directions:
Peel and cut zucchini lengthwise, remove seeds and cut in slices to resemble apple slices. Cook zucchini until tender. Drain and place in cold water for 5 minutes. Drain. Add zucchini to remaining mixed ingredients. Pour into pie crust shell, dot with butter. Cover with top crust. Bake at 400º for 40-50 minutes or until crust is nicely browned.
